Cranberry Nut Energy Bites

Serves 30

Ingredients:

  • 1/2 cup Nature’s Promise® Oat & Ancient Grains Granola
  • 1 cup dry old fashioned oats
  • 1 Tbsp. ground flaxseed
  • 1/2 cup dried cranberries
  • 1 cup Hannaford Mixed Nuts Lightly Salted, coarsely chopped
  • 1 cup dates, coarsely chopped
  • 1 tsp. McCormick® Ground Cinnamon
  • 1/2 cup Nature’s Promise® Crunchy Almond Butter
  • 1/2 cup honey
  • 1 tsp. McCormick® Vanilla Extract

Directions:

  1. In a large mixing bowl, gently crush granola using a wooden spoon. Add oats, ground flax, cranberries, nuts, dates, and cinnamon. Mix well.
  2. In a small bowl, stir together almond butter, honey, and vanilla.
  3. Pour almond butter mixture over dry ingredients; mix well to combine. Refrigerate 2 hours.
  4. Form mixture into 2-inch balls by firmly pressing with moist hands or a spoon.

Dietitian’s Tips

  1. Prepare dates by submerging them in hot water for 5 minutes prior to chopping. This will allow dates to soften and help them mix more easily.
  2. This recipe can easily be made into bars. Line a small baking dish with parchment paper and press mixture in firmly. Once chilled, slice into bars.
  3. Crumble energy bites and serve with Stonyfield® Organic Greek Yogurt as a parfait.
