Primavera Gazpacho


1 medium cucumber, peeled, seeded and finely chopped
1 small onion, finely chopped
2 medium red and/or green bell peppers, finely chopped
1 cup water
1/4 cup red wine vinegar
2 Tbsp. olive oil
1 1/2 cups Taste of Inspirations® Primavera Pasta Sauce
1 Tbsp. fresh cilantro, chopped
2 tsp. McCormick® Poultry Seasoning
1/2 tsp. hot pepper sauce, or more to taste


1. Combine all ingredients in large non-aluminum bowl. Season, if desired, with salt and ground black pepper.
2. Process 1 cup of mixture in blender until smooth; pour back into soup and stir.
3. Cover and refrigerate at least 1 hour.
