1/3 cup uncooked quinoa, rinsed (1 cup cooked)
2/3 cup water
1 cup Hannaford Quick Oats
1/2 cup Nature's Promise® Creamy Peanut Butter
1/2 cup Cabot® Whey Protein Plain Unflavored Powder
1/4 cup Hannaford Honey
1/4 tsp. McCormick® Ground Cinnamon
1 tsp. McCormick® Pure Vanilla Extract
3/4 cup Hannaford Semi-sweet Chocolate Chips

Directions1. Combine quinoa and water in a small saucepan and bring to a boil over medium-high heat. Turn heat to low, cover pot and simmer for 15 minutes, or until all water is absorbed. Remove from heat and set aside to cool slightly.
2. In a food processor, combine oats, peanut butter, protein powder, honey, cinnamon, and vanilla. Add cooled quinoa and process until it comes together to form a ball. If you don't have a food processor, combine mixture with a large spoon.
3. Line a square baking dish with parchment paper (or lightly grease the pan), and pat mixture evenly into pan.
4. Melt chocolate chips in microwave using 30 second intervals, stirring after each interval. Once fully melted, spread chocolate over quinoa mixture in pan. Sprinkle with nut mix if desired.
5. Refrigerate or freeze until ready to serve. Cut into slices. To avoid the tops cracking, set bars out at room temperature for 30 to 60 minutes, or until softened, then cut into squares. Place bars in an airtight container and keep refrigerated.
