3 Tbsp, Hannaford Extra Virgin olive oil
2 Medium carrots, peeled and chopped
1 small yellow onion, chopped
1 ½ tsp Nature's Promise minced garlic
24 oz jar Hannaford Tomato sauce
32 oz. Kitchen Basics Vegetable Stock
15.5 oz can Hannaford Cannellini Beans, drained and rinsed
¼ tsp McCormick Black pepper
1 Cup Fresh Express Baby Spinach, chopped
Directions1. Warm olive oil in a large stockpot over medium-high heat. Add the carrots, onion and garlic. Saute, stirring often, until softened (about 2 to 3 minutes).
2. Add the entire jar of tomato sauce, vegetable stock, beans, uncooked pasta and black pepper.
3. Simmer uncovered for 5 minutes before adding baby spinach. Simmer an additional 5 minutes until spinach is wilted. Ladle into bowls and serve.
