1 small head of cauliflower
1 TBSP olive oil
½ cup diced onion
¼ cup vegetable or chicken broth
½ tsp garlic powder
¼ tsp salt
¼ cup nutritional yeast flakes
Directions1. Rinse cauliflower and "rice" it by grating it with a large cheese shredder or pulsing it in a food processor.
2. In a large skillet, heat olive oil over medium heat.
3. Add the diced onion and saute for 5 minutes. Add riced cauliflower to the pan and stir to coat with olive oil. Saute for another 5 minutes.
4. Add broth, garlic powder, salt and cook an additional 5 minutes. Add nutritional yeast, stir, serve and enjoy.
