Good 4 ME: No-Bake Breakfast Cookies

BANGOR, Maine (WABI) - Kids are back to school. Do you need a quick grab and go breakfast? Hannaford Registered Dietitian Mary LaVanway has just the recipe.

No-Bake Breakfast Cookies

Serves: 24

Ingredients:

  • 3/4 cup Nature’s Promise® Creamy Peanut Butter
  • 1 Tbsp. maple syrup or honey
  • 1 tsp. McCormick® Pure Vanilla Extract
  • 1 tsp. McCormick® Ground Cinnamon
  • 2 Tbsp. chia seeds
  • 3/4 cup Hannaford Quick Oats
  • 1/4 cup (1 scoop) Nature’s Promise Vanilla Whey Protein Powder
  • 1/4 dark chocolate chips
  • 1/4 cup Hannaford Mixed Nuts Lightly Salted, chopped

Directions:

  1. Place peanut butter, maple syrup or honey and vanilla in a large bowl and 00microwave for 20 seconds. Mix well.
  2. Add all other ingredients to the bowl and stir to combine.
  3. Line a sheet pan with foil or parchment paper. Using your hands, roll mixture into 24 spheres and arrange on the sheet pan. Press each sphere to slightly flatten.
  4. Refrigerate cookies for an hour, or until set. Store breakfast cookies in an airtight container in the fridge for up to 2 weeks.
