Stuffed artichoke
Snip ends of all leaves on the artichoke. Peal the stem. Cut artichoke in half and clean the center out. Steam for aprox. 12 minutes or until fork tender. Fill the inside with crab stuffing. Bake at 350 degrees for 15 minutes. Top with lobster and hollandaise sauce.
Chicken with a cherry sauce
Poach chicken breast for 15 minutes. Remove from stock and place in hot pan. Sear until golden brown. Deglaze with chicken stock. Add cherries and butter with flour to form sauce. Serve with starch and vegetable.
Roasted pear
Cut pear in half and core center. Brush with butter and roast at 350 for 20 minutes or until fork tender. Remove from oven and let cool slightly. Fill with sweetened marscapone cheese. Drizzle with favorite sauce.
