Pork Butt Dry Rub Ingredients:
2 cups brown sugar
1 cup salt and pepper mix (ratio 2 to 1 salt to pepper)
1 cup granulated garlic
1 cup light or dark chili powder
3 T onion powder
1 T cumin
1 t cinnamon
1 T cayenne pepper
1 T thyme
Mix all ingredients together. Rub on pork butt, put in fridge and let marinate for at least 8-12 hours, preferably overnight. When done, remove from fridge, and place in smoker for 8-12 hours at a smoking temperature of 225-250. Remove from smoker, chop it up and put back in smoker to stew for another 8 hours.
