Frank's Bakery's Gluten Free Whoopie Pies


Ingredients:

5 T unsalted butter, softened

15 oz. Danielle's Decadent Chocolate Cake Mix

2 large eggs

1 cup low-fat buttermilk or low fat yogurt

Buttercream Frosting Ingredients:

1 pound confectioners sugar
1/2 cup butter, softened
1 teaspoon vanilla extract
3 tablespoons milk

Directions:

Preheat oven to 350. Using a mixer, beat butter until fluffy. Add cake mix and beat until crumbly. Add eggs and beat. Beat in buttermilk or yogurt. Using a small ice cream scoop, spoon mixture onto a wax paper lined cookie sheet. Bake for about 9 minutes.

While those are baking, you can make the buttercream frosting. In a mixing bowl, beat sugar, butter, vanill and milk until smooth. If necessary, you can add more milk until the frosting reaches the desired consistency.

When the cakes are done, remove from oven and let cool. Assemble into whoopee pies using the buttercream frosting.
