Healthy Holidays: After Holiday Turkey Salad


Mary Lavanway is a dietician with Hannaford. In this segment she shares a recipe for After Holiday Turkey Salad with Curried Mango Chutney Dressing

Ingredients:
1 bag Fresh Express® Triple Hearts
1 pound diced roast turkey
1/4 cup slivered dried apricots
1/4 pound fresh snow peas
3 oz. Taste of Inspriations® Mango Chutney
1 teaspoons McCormick® curry powder
2 tablespoons Hannaford® cider vinegar
2 tablespoons my essentials® extra virgin olive oil
1 cup Kashi® 7 Grain Sea Salt Pita Crisps
3 tablepoons roughly chopped flat leaf parsley
Directions:
Make the Dressing:
1. In a medium bowl combine the mango chutney with the curry powder, vinegar and olive oil, whisk till combined,
add salt and pepper to taste and set aside.
Make the Salad:
1. In a medium saucepan of boiling salted water, cook snow peas until bright green, about 1 minute. Remove from
water and immediately submerge in an ice water bath to stop the cooking process. Drain and set aside till ready to
assemble salad.
2. To assemble salad, place Fresh Express® Triple Hearts in a medium bowl, add the snow peas, leftover turkey, dried
apricots and the appropriate amount of dressing. Toss to combine, add the pita crisps and the freshly chopped
parsley and toss one more time.
3. Serve by separating the salad onto four serving dishes.
