Lucerne Inn's Grilled Halibut with a Lemon Lime Compound Butter


*** 4 servings ***

Marinade:

Juice of one lemon and lime

tsp. crushed red pepper

1 tsp. wasabi paste

1 Tbls. olive oil

tsp black pepper

1 Tbls. honey

1 garlic clove, chopped

tsp. salt

Compound butter:

4 oz. unsalted butter

Zest of lemon and lime finely chopped

tsp. chopped garlic

4 6-8 oz. Halibut filets skin on

Combine the ingredients for the marinade in a zip lock bag or bowl and add fish and allow to set at least 1 hour and up to 4 hours.

Soften the butter and add the zest and the garlic. Mix well and set aside for use on the fish after grilling.

Prepare the grill for grilling the fish. Make 2 cuts through the skin length wise just to the flesh of the fish. Grill fish until firm and cooked through (about 6-8 min per side). Remove and place fish on plate and add of the compound butter to each. Enjoy
