Yield-3 cups
2 cups diced ripe mango
1/4 cup frozen, thawed Maine Blueberries
1/2 fresh Maine blueberries
1 cucumber, peeled, seeded and diced
1 jalapeno pepper, seeded and minced
1/2 poblano pepper, seeded and finely diced
2 teaspoons minced fresh ginger
1/4 cup of fresh cilantro cilantro, chopped fine
1 tablespoon brown sugar
1/4 cup lime juice
Salt and pepper to taste
Combine all ingredients and gently toss to mix. Refridgerate for at least an hour and adjust the seasoning if needed.
Excellent served with grilled fish, chicken or as a side dish.
