Serves 4-6
2 cups Black Beans-rinsed
3 tbls olive oil
4 tbls lime juice
1/2 roasted corn kernals
2 cloves garlic minced
1 ripe avocado finely diced
1/2 green pepper finely diced
1/2 red pepper finely diced
1/2 cup red onion finely diced
1-2 jalepeno chillies seeded and minced
1/2 tsp ground cumin
1/2 cup finely chopped cilantro
Salt and black pepper to taste
Combine all ingredients and adjust seasoning to taste
