Stuffed Red Potato with Blue Cheese and Bacon
Yield 12 ea.
Prep Time: 30 min
Cooking Time: 15 min
Ingredients:
Red Potato 6 ea.
Blue Cheese ½ cup
Cream Cheese 1 cup
Bacon Bits ½ cup
Salt & White Pepper to taste
Cheddar Cheese ½ cup
Procedure:
Wash potatoes in cold water then cut in half the short way. Steam/Boil potatoes in water till semi soft. Scoop out inside of potato with small scoop. Set potatoes aside to cool.
In small mixer, combine all other ingredients except the cheddar cheese and stir until they have been incorporated together. Then using a small spoon scoop the filling into the hollowed out potato. Top with cheddar cheese, and bake in the oven at 425° for 15 minutes or until cheddar cheese has browned.
