5 Strips Crispy Bacon
2/3 C. Mayonnaise
1 1/2 T. Cider Vinegar
a pinch of Salt and Pepper
4 tsp. Bacon Fat
1 T. Tomato Water
1 Diced Tomato
1/4 C. Red onion, Julienned
1 head leaf lettuce ( Boston, Bibb, Green or Red Leaf )
Combine mayonnaise, cider, bacon fat, and tomato water. Season with salt and pepper.
Drizzle over leaf lettuce and sprinkle with tomatoes, crispy bacon, and red onion.
