Ingredients:
6 Chicken breast trimmed and pounded
Breading flour ( recipe follows )
2 C milk
Juice of lemon
Oil for frying
Butter recipe:
1 C butter
roasted chopped Pecans
2 T chopped sage
1T honey
1T brown sugar
t cayenne pepper
t salt
t pepper
Soften butter in a mixer or by hand, add the rest of the ingredients and mix to combine. Place the butter mixture on a piece of plastic wrap or parchment paper and roll into a log shape and
Breading Recipe:
2 C. All purpose flour
t. Cayenne pepper
1T Smoked paprika
1t ground coriander
1 T onion powder
1T garlic powder
1 t salt
t pepper
1T chili powder
2t poultry seasoning
1t ground mustard
1t ground thyme
Mix all dry ingredients together and reserve for breading.
Mix milk with the juice of half a lemon. Preheat oil to 350 degrees. dip the chicken breast into the flour mixture, then the milk, then back into the flour mixture. When the oil is up to temp. place the chicken in and fry 8 minutes if the chicken is submerged on oil, 4 -5 minute per side if only half way submerged. cook until it reaches an internal temperature or 165 degrees. Top with a slice of the sage pecan butter and serve with mashed potatoes and a vegetable of your liking.
