How to survive the Holiday Party season.
On the menu: Mini soufflés, stuffed items like mushrooms and wonton shells, and mini kabobs of roasted veggies.
Mini Sweet Potato Soufflés
4 medium sweet potatoes-peeled & chopped
2 Tb butter
2 Tb Soy milk
1 Tb honey
1 tsp salt
½ tsp cinnamon
¼ tsp vanilla
¼ tsp nutmeg
4 egg whites
Preheat oven 350
Boil potatoes until tender. Drain and mash. Add and blend all ingredients EXCEPT egg whites. In separate bowl, beat egg whites to soft peaks. Mix in 1/3 of eggs whites to potatoes. Fold!!! in remaining egg whites. Use muffin pan with paper cups. Scoop into cups---bake for 30 minutes… cool and serve.

Eyewitness Edward Dalton describes what he saw as a 28-year-old man was attacked by a 12- to14-ft shark in Kekaha Kai Sate Park in Hawaii. Dalton said the shark launched into the air before coming down on the unnamed victim, who is hospitalized with non-life threatening injuries.
