3-4 T sea salt
2-3T poultry seasoning
1T paprika
2T garlic powder
Cracked black pepper to taste
3 sticks softened unsalted butter
Combine all spices in a bowl. Using hands to mix work butter into dry mixture to essentially make a compound butter. Let sit for 1/2 hour or so. Rub 3/4 of mixture over turkey (this is for a 20# or so) and inside as well. Cover to bake as directed basting with butter drippings every hour or so...for the last two hours of cooking time...rub remaining butter over the skin and leave uncovered to crisp skin to perfection! It's a butterball without paying for the brand name...:)
