Ingredients:Juice of 1 lemon
1 Tbsp. white wine vinegar
1/4 tsp. kosher salt
Fresh ground black pepper, to taste
1/2 cup olive oil
Fresh Arugula, washed and dried
Diced fresh tomatoes
Shaved Parmesan cheese
Directions:
In a small bowl combine the lemon juice, vinegar salt and pepper. Whisk while gradually drizzling in the olive oil. Set aside.
Divide arugula among salad plates along with tomatoes.
Just before serving drizzle salad dressing over salads, then using a vegetable peeler, shave parmesan over plates. Serve.
