Ingredients:
fresh yellowfin tuna steaks
2 cups seedless watermelon, chopped
1 cucumber, seeds removed, chopped
2 cans mandarin orange sections, light syrup, mostly drained
1/4 cup chopped red onion
1/2 cup chopped red or green bell pepper
1/2 cup orange juice
1 tablespoon lemon juice
1/4 cup olive oil
1/2 teaspoon salt
1/8 teaspoon crushed red pepper flakes
1-2 tablespoons fresh, chopped cilantro
Directions:
For salsa, combine watermelon, cucumber, mandarin oranges, onion, pepper, orange juice, lemon juice, olive oil, salt and red pepper flakes in a bowl and stir well. Salsa is best if made at least 3-4 hours ahead of time.
When you purchase your fresh tuna steaks, make sure to have the skin and bloodline removed. Turn the heat on your grill to high and make sure to spray or grease the grate. Place tuna steaks onto hot grill. After one minute turn the tuna 90 to get nice even markings. Another minute later, flip tuna and close the lid. One more minute and the tuna should be cooked rare, leave on grill longer for desired doneness. Be careful, tuna cooks very quickly. Lightly butter and salt tuna steaks before serving with salsa.
