3 lbs or more butternut squash
1/4 cup onion chopped
1 cup 1/2 and 1/2 or more if needed
2 TBLSP butter
1-1/half cups water
4 veg boullion cubes
1/4 cup orange juice
1 TBLSP grated orange peel
1/4 tsp cinnamon
1/4 tsp nutmeg
1-2 tsp. fresh grated ginger
Cook squash.
In blender or food processor, puree squash with 1/2 & 1/2, onion, orange peel, spices, oj.
Dissolve the boullion cubes in the water, add to pureed ingredients. mix and blend well. add salt and pepper to taste, add more ginger to taste if desired.
