Preheat Oven to 425
1 nine inch pie crust
1 large egg yolk
brush egg yolk on pie crust & bake for about 10 minutes.
Remove from oven.
Pie Filling
Mix Together
2 1/2 cups Pureed, cooked sweet potatoes (I use about 2 medium sweet potatoes that I bake first. Canned sweet potatoes or yams have a very different taste in the pie.)
1 1/2 cup heavy cream
1/2 cup sugar
1/3 cup packed brown sugar
1 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon allspice
Add mixture to pie crust.
Bake for about 45 minutes.
