8 large Sweet Potatoes(cooked & mashed), set aside
Mix the following together:
2 eggs, beaten
1C. sugar
1tsp. nutmeg
1tsp. cinnamon
6Tblsp. butter
Mix well and and add to potatoes. Place mixture in a greased casserole dish(9x9) and bake at 400 for 20 mins.
TOPPING:
2C. Cornflakes
1C. Brown Sugar
1C. Chopped Pecans
4TBL. Soften Butter
Mix together to form a crinkle topping. (best when done using hands with gloves :) gets a bit gooey). Sprinkle on mixture return to oven for 10 mins. Enjoy Family favorite passed down from my Aunt.
