Ingredients:

Cake batter:

3 eggs

2/3 C pumpkin

1 t lemon juice

C flour

1 C granulated sugar

1 t baking powder

2 t cinnamon

1 t ginger

t nutmeg

t salt

powdered sugar for garnish

Filling:

8 oz. cream cheese

4 T butter

1 C powdered sugar

t vanilla

Directions:

In a mixing bowl, combine eggs, pumpkin and lemon juice. Mix well. Add baking powder, spices and salt. Mix well. Add flour and mix until well incorporated. Grease then line a medium baking sheet with waxed or parchment paper, approximately 15"x10" baking sheet. Pour batter into pan and spread throughout pan, smoothing as best as possible. Bake in 350 oven for about 15 minutes. Remove and let cool completely.

For the filling, mix together cream cheese, butter and vanilla until smooth. Add powdered sugar and mix well.

When cake has cooled, lay on a flat surface and spread filling evenly across the top of the cake. Then slowly roll completely. Sprinkle with powdered sugar and enjoy.
